Siapa yang tidak suka bubur? Makanan yang berbahan dasar beras dan air ini sudah lekat dengan kehidupan kita sehari – hari. Bahkan saat kita melewati masa 6 bulan pertama dalam kehidupan, makanan yang asup ke kita adalah bubur.
Bubur di tiap daerah di Indonesia punya keunikannya masing – masing. Saya pernah ke Cirebon untuk mencicipi bubur khas disana. Ternyata bubur Cirebon itu beda banget sama yang biasa saya jumpai di Jakarta.
Bubur yang asli Cirebon itu bentuknya padat, lalu disajikan bersamaan dengan menuang kuah sop ayam yang melimpah di atas buburnya.
Kali ini saya berada di Tanah Rencong, Aceh yang ternyata juga memiliki bubur yang khas. Namanya bubur kanji rumbi.
Di Lhokseumawe saya menemukan penjualnya di Pasar Batuphat di pagi hari dan di samping Pasar Inpres yang mulai beroperasi pada jam 3 sore.
Saya berkesempatan mencicipi keduanya. Di Pasar Batuphat penjualnya ialah seorang wanita paruh baya yang berasal dari Sigli. Beliau menjualnya dengan harga Rp 5 ribu. Bubur buatannya tidak menggunapan tambahan apapun sebagai topping-nya. Meski demikian rasanya buburnya begitu kuat dan rasa kaldu udangnya begitu terasa.
Sementara itu persis di sebelah Pasar Inpres Lhokseumawe, saya berjumpa dengan bapak Muhammad Nasir. Beliau berasal dari Reubee, sebuah kampung di Kabupaten Pidie. Beliau sudah dua tahun mengelola kedai bubur kanji rumbi dengan label Cek Man. Cek Man sendiri adalah nama panggilan abangnya yang juga menjual bubur yang sama di bilangan Kutablang, Lhokseumawe.
Pak Nasir begitu lincah gerakannya saat melayani pelanggan. Dalam sehari ia mampu menjual satu kuali bubur. Dalam satu kuali ini mampu menghasilkan hingga 60 porsi bubur. Kedai bubur miliknya tidak pernah sepi dari pengunjung. Selalu saja ada pembeli yang datang bergantian.
Aroma rempah yang begitu kuat langsung menyeruak saat Pak Nasir mengaduk – aduk bubur di kuali. Aroma ini sunggu menggugah selera. Saya segera memesan satu porsi untuk menyantapnya.
Jika dibandingkan dengan bubur yang dijual abang – abang di Jakarta, bubur kanji rumbi ini memiliki tekstur yang lebih encer. Saat dihidang segera dimakan, jangan sampai dingin sebab bubur ini akan semakin cair dan kehilangan cita rasanya.
Harga bubur kanji rumbi yang dijual oleh Pak Nasir Rp 10 ribu. Ia menambahkan suwiran daging ayam, udang kering, daun seledri dan bawang goreng sebagai pelengkapnya. Oh ya, di dalam buburnya juga terdapat potongan kentang, jadi dijamin bikin kenyang makan bubur ini.
Kaya Akan Rempah
Meski terlihat sederhana, namun tak semua orang bisa dan mau untuk membuat bubur kanji rumbi ini. Sebab bubur kanji rumbi menggunakan cukup banyak campuran rempah aromatik yang bisa membuat cita rasa unik terhadap bubur tersebut.
Bahan – bahan untuk membuat bubur khas Aceh ini diantaranya beras, bawang putih, bawang merah, batang serai, jahe, merica, cengkeh, minyak sayur, minyak samin, air dan garam secukupnya. Cukup kompleks bukan?
